  • 4 slices whole wheat bread
  • 2 cans chunk light tuna drained
  • 1 medium shallot minced (about 2 tablespoons)
  • 2 tablespoons reduced-fat mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon flat leaf parsley minced
  • 1/8 teaspoon salt
  • 1 dash hot sauce like Tabasco
  • to taste fresh ground pepper
  • 2 tomatoes sliced
  • 1/2 cup shredded sharp cheddar cheese

Method
 

  1. Preheat the broiler and toast the whole wheat bread slices until lightly golden.
  2. In a medium bowl, combine the drained chunk light tuna, minced shallot, reduced-fat mayonnaise, lemon juice, minced flat leaf parsley, salt, hot sauce, and freshly ground pepper. Mix until well combined.
  3. Spread about 1/4 cup of the tuna mixture on each toast slice. Top with tomato slices and shredded sharp cheddar cheese.
  4. Place the open-faced sandwiches on a baking sheet and broil for 3 to 5 minutes until cheese is melted and bubbly with golden-brown spots.

Notes

For the best melt, freshly shred the cheddar cheese instead of using pre-shredded.
