Method
- Cook the Mexican-style chicken rice pilaf according to package instructions.
- Add the rinsed black beans, corn, chopped scallions, sliced black olives, and diced chicken to the cooked rice. Gently fold in chopped cilantro.
- Transfer to a serving platter and garnish with avocado slices, salsa, sour cream, and tortilla chips.
Notes
Use rotisserie chicken for convenience or substitute cilantro with parsley if preferred.
