Zesty Brazilian Chicken Black Bean Rice

A vibrant one-pot Brazilian chicken and black bean rice dish with Mexican-style rice and fresh toppings for a satisfying weeknight meal.

Ingredients
  

Main Ingredients
  • 1 package Mexican-style chicken rice pilaf mix
  • 1 can black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 bunch scallions chopped
  • 1/2 cup black olives pitted, sliced lengthwise
  • 4 cups cooked diced chicken meat or meat from 1/2 roasting chicken
  • 1/2 bunch cilantro fresh, chopped
  • 1 avocado avocado ripe, sliced or guacamole
  • as needed salsa for garnishing
  • as needed sour cream for garnishing
  • as needed tortilla chips for serving

Method
 

  1. Cook the Mexican-style chicken rice pilaf according to package instructions.
  2. Add the rinsed black beans, corn, chopped scallions, sliced black olives, and diced chicken to the cooked rice. Gently fold in chopped cilantro.
  3. Transfer to a serving platter and garnish with avocado slices, salsa, sour cream, and tortilla chips.

Notes

Use rotisserie chicken for convenience or substitute cilantro with parsley if preferred.
