  • 1/3 cup cup dry red wine (or beef broth)
  • 1/2 lb lb sliced baby portabella mushrooms
  • 1 small onion halved and sliced
  • 2 cups cups beef broth
  • 1 tablespoon tablespoon Worcestershire sauce
  • 3-4 tablespoons tablespoons cornstarch
  • 1/4 cup cup cold water

Method
 

  1. Prep ingredients: cube top sirloin steak into bite-sized pieces and season generously with salt and pepper.
  2. Brown meat in batches in a 6-qt Instant Pot on sauté mode using 2 teaspoons olive oil until golden-brown.
  3. Deglaze pot with 1/3 cup dry red wine (or beef broth), scraping up browned bits.
  4. Add mushrooms, sliced onion, 2 cups beef broth, and Worcestershire sauce to the pot.
  5. Lock lid, set to high pressure for 15 minutes, then quickly release pressure.
  6. Return beef to pot, bring liquid to boil, then mix cornstarch with cold water and stir into mixture to thicken for 1-2 minutes.
  7. Serve over creamy mashed potatoes for the ultimate comfort meal.
