Method
 

  1. Place the chuck roast in the crock pot.
  2. Add 2 cups of water.
  3. Sprinkle dry seasoning mix over the roast.
  4. Cook on low for 8 hours overnight.
  5. After 8 hours, chop 2 carrots, 2 potatoes, and 2 celery stalks and nestle them around the roast.
  6. Cook on low for an additional 10-12 hours.

Notes

Swap carrots, potatoes, and celery stalks for parsnips, turnips, or sweet potatoes to change the flavor profile. The roast can be refrigerated for up to three days and reheated on the stove or in the microwave. It’s an excellent make‑ahead dinner that works well for meal‑prep. Serve with creamy mashed potatoes, roasted Brussels sprouts, or crusty sourdough bread to soak up the savory juices.
