Sizzling Beef and Broccoli Stir-Fry

  • 1/2 pound beef flank steak sliced thinly across the grain
  • 1 tablespoon light soy sauce
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon sambal oelek chili paste
  • 1/4 teaspoon sesame oil
  • 1 tablespoon cornstarch or tapioca starch
  • 1 pound fresh broccoli broken into florets and sliced in half
  • 4 tablespoons peanut oil divided
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 2 cloves garlic crushed

Method
 

  1. Combine light soy sauce, black pepper, sambal oelek, sesame oil, and cornstarch in a mixing bowl. Add sliced flank steak, coat thoroughly, and let marinate for 15 minutes.
  2. Heat 2 tablespoons peanut oil in a wok until smoking. Add broccoli florets and salt, stir, then add water and cover. Steam for 3-4 minutes until crisp-tender. Remove broccoli, reserving the cooking liquid.
  3. Reheat the wok, add the remaining 2 tablespoons peanut oil, and brown the crushed garlic for about 1 minute.
  4. Add the marinated beef and stir-fry for 1 minute, or until it just begins to change color.
  5. Return the broccoli and reserved cooking liquid to the wok. Toss everything together for 30 seconds until the sauce is glossy and coats all ingredients. Serve immediately.

Notes

Slice the beef thinly against the grain for maximum tenderness and faster cooking.
