  • 2 Alaska sablefish steaks 6-ounce
  • salt and pepper to taste
  • 1/3 cup onion chopped
  • 3 tablespoons green chilies diced
  • 2 tablespoons oil
  • 1 tomato chopped
  • 1/4 cup parsley chopped
  • 1 tablespoon lime juice
  • 1/4 teaspoon oregano crushed
  • 1 dash sugar
  • 4 green pepper rings
  • cooked rice for serving
  • lime wedges for garnish

Method
 

  1. Season the Alaska sablefish steaks with salt and pepper to taste.
  2. In a bowl, combine chopped onion, diced green chilies, chopped tomato, chopped parsley, lime juice, crushed oregano, and sugar to make the sauce.
  3. For the microwave method: Arrange green pepper rings on the seasoned fish in a microwave-safe dish. Pour the sauce over, cover with plastic wrap, and microwave at medium power for 5 minutes. Rotate the dish and microwave for another 5-6 minutes until the fish flakes easily with a fork.
  4. For the oven method: Heat oil in a sauté pan and cook onion and green chilies until softened. Add tomato, parsley, lime juice, oregano, and sugar, and cook until tomatoes break down. Pour this sauce over the fish topped with green pepper rings in a baking dish. Bake at 450°F for about 10 minutes per inch of thickness.
  5. Serve the sablefish over warm cooked rice, garnished with lime wedges.

Notes

Use fresh parsley for optimal flavor and cook the fish until it flakes easily but remains moist.
