  • 1 lb beef chuck cut into 1-inch cubes
  • 1 lb ground beef
  • 2 tsp vegetable oil
  • 1 each onion chopped
  • 2 each garlic cloves minced
  • 2 each chipotle chiles in adobo finely chopped
  • 1 (15 ounce) black beans rinsed
  • 1 each sweet potato diced (1 large or 4 small)
  • 2 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 3 tbsp tomato paste
  • 1 tsp salt
  • 1 (15 ounce) crushed tomatoes
  • 1 (15 ounce) tomato sauce
  • 2 cups water

Method
 

  1. Set Instant Pot to sauté mode and add 2 teaspoons vegetable oil. Toss in 1 chopped onion and 2 minced garlic cloves, letting them sizzle and soften until fragrant and translucent.
  2. Add 1 lb beef chuck cut into 1-inch cubes and 1 lb ground beef to the pot. Brown the meat thoroughly, stirring occasionally to guarantee even cooking.
  3. Pour in 2 cups water and use it to deglaze the pan, scraping up all those delicious caramelized meat bits.
  4. Stir in the remaining ingredients (chili powder, cumin, oregano, paprika, tomato paste, salt, crushed tomatoes, tomato sauce, and chipotle chiles) except for black beans and sweet potatoes.
  5. Cook on high pressure for 20 minutes, then let it naturally release for 5 minutes.
  6. Add 1 large diced sweet potato and 1 can rinsed black beans, then cook on high pressure for another 10 minutes.
  7. Perform a quick release, taste and adjust salt, then serve with favorite chili toppings.
