Hearty Leftover Turkey Carcass Soup

Ingredients
  

Soup Ingredients
  • 1 leftover turkey carcass
  • 2 tablespoons vegetable oil
  • 2 cans chicken broth 14½ ounce each
  • 8 cups water about, enough to cover carcass
  • 1 can tomato sauce 8 ounce
  • 1 onion large, finely chopped
  • 5 stalks celery divided
  • 2 carrots large
  • 1 garlic clove
  • 1 tablespoon garlic salt
  • fresh ground pepper to taste
  • fresh herbs parsley, thyme, or favorites
  • fine egg noodles for serving

Equipment

  • Large soup pot
  • colander or strainer
  • pot for strained broth

Method
 

  1. Heat vegetable oil in a large soup pot and add chopped onion, 2 stalks celery, and garlic. Cook gently until tender and fragrant, about 5-10 minutes.
  2. Add the turkey carcass, chicken broth, tomato sauce, and enough water to cover. Include garlic salt, pepper, and fresh herbs. Bring to a boil, then reduce to a simmer and cook for 1 hour, skimming foam as needed.
  3. Strain the broth into another pot. Discard solids. Once cool enough, pick all meat from the carcass and return to the broth. Add the remaining 3 stalks of chopped celery and any additional leftover turkey.
  4. Simmer for 90 minutes, adding the carrots about 45 minutes before serving. Serve the soup ladled over fine egg noodles.

Notes

Substitute egg noodles with rice, orzo, or barley for a different texture.
