  • 3 hot Italian sausages
  • 4 cups chicken broth
  • 1 can stewed tomatoes 540 ml
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/2 cup shell macaroni
  • 1 can red kidney beans drained
  • 1 can chickpeas drained
  • grated parmesan cheese for serving

Method
 

  1. Brown the hot Italian sausages in a large pot until no pink remains.
  2. Add chicken broth and stewed tomatoes to the pot.
  3. Stir in thyme and basil.
  4. Bring to a boil, then add shell macaroni, red kidney beans, and chickpeas.
  5. Simmer until pasta is tender, about 8-10 minutes.
  6. Serve with grated parmesan cheese on top.

Notes

Use freshly grated parmesan cheese for enhanced flavor instead of pre-grated.
