- Brown 1 pound of hamburger and 1 chopped onion in a large soup pot over medium heat. Drain excess fat.
- Add 3-4 diced potatoes, 1 chopped celery stalk, 3-4 chopped carrots, and 1/2 head shredded cabbage to the pot. Cook for 5-10 minutes.
- Pour in 46-ounce can of tomato juice and sprinkle in 1-ounce package of onion soup mix. Stir well.
- Simmer gently for about an hour, uncovered, until vegetables are tender and flavors meld.
- Season with salt and pepper to taste just before serving.
