  • 0.5 cup breadcrumbs
  • 3 whole wheat English muffins
  • 3 lettuce leaves
  • 1 tomato sliced

Method
 

  1. Process the mushrooms, celery, onion, and parsley in a food processor until smooth.
  2. In a large bowl, combine the vegetable mixture with ground chicken, egg white, soy sauce, and breadcrumbs. Mix until well blended, then divide into 6 portions and shape into balls.
  3. Place the balls on a parchment-lined baking tray and flatten into patties.
  4. Bake in a preheated 375°F oven for 20 minutes or until cooked through and slightly browned.
  5. Serve each patty on half a whole wheat English muffin with lettuce and tomato slices.

Notes

Finely chopping the mushrooms and celery creates moisture pockets that keep the burgers juicy during cooking.
