Method
- Process the mushrooms, celery, onion, and parsley in a food processor until smooth.
- In a large bowl, combine the vegetable mixture with ground chicken, egg white, soy sauce, and breadcrumbs. Mix until well blended, then divide into 6 portions and shape into balls.
- Place the balls on a parchment-lined baking tray and flatten into patties.
- Bake in a preheated 375°F oven for 20 minutes or until cooked through and slightly browned.
- Serve each patty on half a whole wheat English muffin with lettuce and tomato slices.
