Ingredients
  

  • 2 steaks flat iron steaks each 1 lb; or substitute with 1 2-lb flank steak
  • 2 tablespoons olive oil
  • 2 cloves garlic mashed
  • 1 teaspoon Italian parsley chopped
  • 1 teaspoon rosemary chopped
  • 1/4 cup cabernet sauvignon wine
  • to taste salt
  • generous amount freshly ground black pepper
  • 1/2 teaspoon dry mustard

Method
 

  1. In a medium bowl, combine olive oil, mashed garlic, chopped parsley, chopped rosemary, cabernet sauvignon, black pepper, salt, and dry mustard. Whisk until well blended.
  2. Place flat iron steaks in a shallow dish or resealable plastic bag. Pour the marinade over the steaks, turning to coat thoroughly. Marinate for 1 hour at room temperature or up to 4 hours in the refrigerator.
  3. Preheat grill to high heat. Remove steaks from marinade, allowing excess to drip off, and place on the grill. Cook for about 4 minutes per side for medium-rare.
  4. Let steaks rest for 5 minutes, then slice against the grain.

Use fresh herbs for optimal flavor and avoid cooking wine to maintain the marinade's balance.
