- In a medium bowl, combine olive oil, mashed garlic, chopped parsley, chopped rosemary, cabernet sauvignon, black pepper, salt, and dry mustard. Whisk until well blended.
- Place flat iron steaks in a shallow dish or resealable plastic bag. Pour the marinade over the steaks, turning to coat thoroughly. Marinate for 1 hour at room temperature or up to 4 hours in the refrigerator.
- Preheat grill to high heat. Remove steaks from marinade, allowing excess to drip off, and place on the grill. Cook for about 4 minutes per side for medium-rare.
- Let steaks rest for 5 minutes, then slice against the grain.
