Easy Weeknight Turkey Meatball Subs with Mozzarella

  • 1 lb ground turkey
  • 1/2 onion onion medium, finely chopped
  • 1/4 cup seasoned bread crumbs
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons cooking sherry
  • 2 teaspoons steak sauce
  • 1/2 teaspoon garlic powder
  • 1 large egg beaten
  • 1 dash adobo seasoning
  • 1 jar prepared spaghetti sauce 8 ounce (or about 1 cup homemade)
  • 2 loaves French bread such as Pepperidge Farm or other crusty bread
  • as needed shredded mozzarella cheese

Method
 

  1. In a large bowl, combine ground turkey, finely chopped onion, seasoned bread crumbs, salt, black pepper, cooking sherry, steak sauce, garlic powder, and beaten egg. Mix well with hands and shape into 16 medium meatballs.
  2. Place meatballs on a foil-lined baking dish, sprinkle with adobo seasoning, and bake at 375°F for 40 minutes, or until fully cooked. During the last 5 minutes of baking, warm the French bread in the oven.
  3. Slice each loaf of French bread lengthwise. Place the cooked meatballs on the bottom half of each loaf.
  4. Spoon the spaghetti sauce over the meatballs, then generously top with shredded mozzarella cheese.
  5. Place the assembled subs in the oven at 325°F and bake until the cheese is melted and bubbly. Cut each loaf in half and serve immediately.

Notes

For juicier meatballs, use 93/7 ground turkey and a crusty French loaf to prevent soggy subs.
