  • 1 1/2 teaspoons salt
  • 3 1/2 teaspoons paprika
  • 2/3 teaspoon garlic powder
  • 1/3 teaspoon fennel seed
  • 1 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

Method
 

  1. Place the ground pork in a large mixing bowl.
  2. In a small bowl, mix together salt, paprika, garlic powder, fennel seed, black pepper, and crushed red pepper flakes until well combined.
  3. Add the spice mixture to the pork and mix thoroughly with your hands, ensuring even distribution without overworking the meat.
  4. Cover the mixture and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld.
  5. Shape the sausage into patties, meatballs, or leave it loose for cooking as needed.
  6. Cook the sausage until it reaches an internal temperature of 160°F and is no longer pink.

Notes

For optimal flavor, refrigerate the sausage mixture overnight before cooking.
