- Remove the casings from the Hungarian smoked sausages.
- Heat a skillet over medium-high heat and add the sausages. Brown them lightly, breaking them up with a spatula.
- Add the sliced green and red bell peppers, sliced mushrooms, minced garlic, and chopped onion to the skillet.
- Stir-fry for about 5 minutes, until the peppers begin to soften but still have some crunch.
- Pour in the zesty Italian dressing and simmer, stirring occasionally, until the dressing reduces almost completely.
- Season the mixture with salt and pepper to taste.
- If desired, warm the tortillas for 10-15 seconds in the microwave or a dry skillet to make them pliable.
- Divide the sausage mixture between the two tortillas.
- Roll up each tortilla tightly, tucking in the ends if preferred.
- Serve immediately while hot.
Notes
For best results, let the Italian dressing reduce completely to concentrate the flavors and coat the ingredients evenly.
