- Brown the Italian sausage in a large saucepan over medium-high heat.
- Add chopped onions and diced carrots, sautéing for about 3 minutes until softened.
- Stir in sliced mushrooms and minced garlic, cooking for another 3 minutes.
- Pour in chicken broth, stewed tomatoes, and tomato sauce. Bring the mixture to a boil.
- Add the pasta, reduce heat to a simmer, and cook until pasta is al dente (about 10 minutes).
- Stir in fresh spinach until wilted.
- Place diced provolone or mozzarella in the bottom of each serving bowl, then ladle the hot soup over the cheese.
- Garnish each bowl with shredded Parmesan and sliced fresh basil before serving.
Notes
Place the cheese in the bowl before adding the hot soup to create a delicious, melted cheese layer at the bottom.
