  • 1 lb bulk Italian sausage
  • 2 cups chopped onions
  • 1 cup diced carrots
  • 2 cups sliced mushrooms
  • 2 tablespoons minced garlic
  • 4 cups chicken broth
  • 1 can (14.5 oz) Italian-style stewed tomatoes chopped
  • 1 can (10.75 oz) tomato sauce
  • 1 cup mafalda or campanelle pasta
  • 2 cups chopped fresh spinach
  • 1 cup diced provolone or fresh mozzarella cheese
  • 0.25 cup shredded Parmesan cheese for garnish
  • 4 teaspoons thinly sliced fresh basil for garnish

Method
 

  1. Brown the Italian sausage in a large saucepan over medium-high heat.
  2. Add chopped onions and diced carrots, sautéing for about 3 minutes until softened.
  3. Stir in sliced mushrooms and minced garlic, cooking for another 3 minutes.
  4. Pour in chicken broth, stewed tomatoes, and tomato sauce. Bring the mixture to a boil.
  5. Add the pasta, reduce heat to a simmer, and cook until pasta is al dente (about 10 minutes).
  6. Stir in fresh spinach until wilted.
  7. Place diced provolone or mozzarella in the bottom of each serving bowl, then ladle the hot soup over the cheese.
  8. Garnish each bowl with shredded Parmesan and sliced fresh basil before serving.

Notes

Place the cheese in the bowl before adding the hot soup to create a delicious, melted cheese layer at the bottom.
