  • 8-10 ounces boneless round steak cubed
  • 1 medium onion diced
  • 1/2 pound fresh mushrooms chopped
  • 1 carrot diced
  • 1 stalk celery diced
  • 1/2 cup pearl barley or quick-cooking barley
  • 1 clove garlic minced
  • 2 cans condensed beef broth
  • 7 cups water approximately
  • fresh ground pepper to taste
  • small amount oil for browning

Method
 

  1. Brown the cubed round steak, onion, and mushrooms in a large saucepan with oil until golden and caramelized to develop fond.
  2. Add carrots, celery, garlic, and pearl barley; stir to coat in the oils.
  3. Pour in condensed beef broth and water; bring to a gentle boil.
  4. Reduce heat to low and simmer for 45-55 minutes until beef and barley are tender, stirring occasionally.
  5. Season with fresh ground pepper and salt to taste before serving.

Notes

For deeper flavor, use well-marbled round steak and don't skip the browning step to create fond.
