  • 2 cans tuna 6 ounce, drained
  • 2 large potatoes peeled, boiled and mashed
  • 1/2 cup onion diced
  • 2 eggs
  • 2 teaspoons pickle relish
  • 1/2 lemon juice from 1/2 lemon
  • 3/4 cup cracker crumbs
  • cooking spray

Method
 

  1. Preheat oven to 375°F.
  2. In a large mixing bowl, combine drained tuna, mashed potatoes, diced onion, eggs, pickle relish, and lemon juice. Mix until well combined.
  3. Form the mixture into 6 evenly-sized patties and chill in the freezer for 10 minutes.
  4. Coat each chilled patty with cracker crumbs, pressing gently to adhere.
  5. Spray a baking sheet with cooking spray, arrange patties with space between, and bake for 40 minutes, flipping halfway through, until golden brown.
  6. Serve on hamburger buns with lettuce, tomato, and Thousand Island dressing, if desired.

Notes

Chilling the patties before baking helps them hold their shape and ensures even cooking.
