  • 3 tablespoons soft margarine such as Becel
  • 4 tablespoons flour
  • 1 teaspoon salt
  • 2 cups 1% low-fat milk
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon Worcestershire sauce
  • 2 cans salmon 7 1/2 ounces each
  • 1 1/2 cups cooked rice
  • 1 cup grated cheddar cheese

Method
 

  1. Preheat oven to 350°F and grease a casserole dish.
  2. In a saucepan over medium heat, melt soft margarine, then stir in flour and salt. Cook for about 1 minute, stirring constantly.
  3. Remove from heat and gradually whisk in milk until smooth. Return to heat and cook, stirring, until the sauce thickens.
  4. Stir in curry powder and Worcestershire sauce.
  5. Gently fold in flaked salmon and cooked rice.
  6. Transfer the mixture to the prepared casserole dish and spread evenly.
  7. Sprinkle grated cheddar cheese over the top.
  8. Bake for 30 minutes, or until the cheese is bubbly and golden brown.

Notes

Use leftover cooked rice to save time and add a creamy, comforting touch to this easy weeknight casserole.
