Easy Chicken Fajitas

Ingredients
  

For the Fajitas
  • 1 lb chicken breast thinly sliced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 large green bell pepper sliced
  • 1 large red bell pepper sliced
  • 1 large yellow onion sliced
For Serving
  • 8 flour tortillas warmed
  • 1/2 cup salsa
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lime cut into wedges

Equipment

  • Large skillet or fajita pan
  • Large bowl
  • Tongs or spatula

Method
 

  1. In a large bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add sliced chicken and toss to coat evenly.
  2. Heat 1 tablespoon oil in a large skillet or fajita pan over medium-high heat. Cook chicken in a single layer until browned and cooked through, about 5-6 minutes per side. Remove and set aside.
  3. Add remaining tablespoon of oil to the skillet. Add sliced bell peppers and onion. Cook, stirring occasionally, until softened and slightly charred, about 6-8 minutes.
  4. Return cooked chicken to the skillet with the vegetables. Toss everything together and heat for 1-2 minutes.
  5. Serve immediately with warm tortillas, salsa, cheese, sour cream, cilantro, and lime wedges.

Notes

Marinate the chicken in the spice mix for 30 minutes for extra flavor, or use pre-cooked shredded chicken for an even faster meal.
