- Cook lasagna noodles 2-5 minutes less than package instructions; drain and let cool until handleable.
- In a mixing bowl, combine ricotta, grated mozzarella, Parmesan, thoroughly squeezed-dry spinach, and egg to make the filling.
- Lay each noodle flat and spread a layer of cheese mixture lengthwise. Top with a spoonful of spaghetti sauce.
- Carefully roll each noodle from one end to the other and place seam-side down in a greased 13x9-inch baking dish.
- Top the rolls with additional spaghetti sauce and a generous sprinkle of Parmesan cheese.
- Bake at 350°F for about 30 minutes, until hot and bubbly with a golden cheese top.
Notes
Squeeze the spinach thoroughly to prevent watery roll-ups.
