Easy Cheesy Spinach Lasagna Roll Ups

Ingredients

  • 12 noodles lasagna noodles cooked al dente
  • 15 ounces ricotta cheese
  • 1 pound mozzarella cheese grated
  • as needed sprinkle Parmesan cheese grated
  • 1 16 ounce bag frozen spinach thawed, rinsed and squeezed dry
  • 1 large egg
  • as needed spaghetti sauce store-bought or homemade

  • 13×9 inch baking dish
  • mixing bowl

Method
 

  1. Cook lasagna noodles 2-5 minutes less than package instructions; drain and let cool until handleable.
  2. In a mixing bowl, combine ricotta, grated mozzarella, Parmesan, thoroughly squeezed-dry spinach, and egg to make the filling.
  3. Lay each noodle flat and spread a layer of cheese mixture lengthwise. Top with a spoonful of spaghetti sauce.
  4. Carefully roll each noodle from one end to the other and place seam-side down in a greased 13x9-inch baking dish.
  5. Top the rolls with additional spaghetti sauce and a generous sprinkle of Parmesan cheese.
  6. Bake at 350°F for about 30 minutes, until hot and bubbly with a golden cheese top.

Notes

Squeeze the spinach thoroughly to prevent watery roll-ups.
