  • 4 red snapper fillets or other firm fish, about 1½ pounds
  • 1 teaspoon salt
  • 1 tablespoon garlic powder
  • 2 teaspoons dried thyme
  • 1 tablespoon dried parsley flakes
  • 1 tablespoon dried basil
  • 1-2 teaspoons cayenne pepper adjust to heat preference
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Method
 

  1. In a bowl, combine salt, garlic powder, dried thyme, dried parsley flakes, dried basil, cayenne pepper, and black pepper. Mix thoroughly, then spread onto a flat plate.
  2. Press the fish fillets firmly into the spice mixture to coat both sides generously.
  3. Heat olive oil in a heavy skillet over high heat until almost smoking.
  4. Cook fillets for about 2½ minutes per side for fillets less than ¾ inch thick, or longer for thicker pieces, until the exterior is dark and crusty and the fish flakes easily with a fork.

Notes

Customize the heat level by adjusting the amount of cayenne pepper to your preference.
