Ingredients

  • 4 pounds short rib of beef alternatives: tri tip or flank steak
  • 2/3 cup green onions thinly sliced
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1/4 cup sesame oil
  • 2 1/2 tablespoons packed brown sugar
  • 2 tablespoons sesame seeds lightly toasted and crushed
  • 2 cloves garlic crushed
  • 1 tablespoon fresh ginger grated
  • 1/2 teaspoon red pepper flakes
  • 1/8 teaspoon ground Szechwan pepper

Method
 

  1. Trim the beef into thin slices about 1/2 inch thick. If using tri tip or flank steak, slice against the grain.
  2. In a large ziplock bag, combine green onions, soy sauce, water, sesame oil, brown sugar, sesame seeds, garlic, ginger, red pepper flakes, and Szechwan pepper. Seal and massage until thoroughly mixed.
  3. Add beef slices to the bag, reseal, and massage until coated. Refrigerate for 4-6 hours, turning occasionally.
  4. Remove beef from marinade, reserving the marinade. Grill, broil, or pan-fry the beef for 3-6 minutes per side, brushing with additional marinade when flipping.

Notes

For maximum tenderness, slice the beef as thinly as possible against the grain and marinate for at least 4 hours.
