  • 4 chicken breast
  • 2-3 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 bag fresh spinach 10 ounce, chopped, washed
  • 1/4 cup fresh basil minced
  • 2 cloves garlic minced
  • 2 teaspoons spicy brown mustard Gulden's preferred
  • 2 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1/2 cup Italian breadcrumbs
  • 1/4 teaspoon cayenne pepper

Method
 

  1. Preheat oven to 400°F. Butter a baking dish and spread chopped spinach over the bottom. Sprinkle lemon juice over spinach.
  2. Pat chicken breasts dry and arrange on spinach. In a small bowl, combine basil, garlic, mustard, mayonnaise, olive oil, and soy sauce. Spread mixture over chicken. Top with breadcrumbs and cayenne pepper.
  3. Bake for 20-25 minutes, or until chicken is cooked through and juices run clear.

Notes

For even cooking, use chicken breasts of similar size and pat them dry before topping.
