- The night before, cut the chicken into bite-size pieces and place in a bowl with beaten eggs. Ensure chicken is fully submerged, cover, and refrigerate overnight.
- The next day, heat oil in a skillet over medium heat. Dip each piece of chicken into Italian seasoned breadcrumbs, coating completely. Fry for about 4-5 minutes until golden brown.
- In the crock pot, layer chicken pieces and fresh mushrooms. Repeat layers until all chicken and mushrooms are used. Pour in chicken broth.
- Cook on low for 4-5 hours.
- After cooking, sprinkle shredded cheese on top. Cover for a few minutes until cheese is melted.
Notes
For the best texture, make sure the chicken is fully coated in breadcrumbs before frying to achieve a crispy exterior.
