  • 3-4 boneless chicken breasts cut into bite-size pieces
  • 4-5 eggs beaten
  • 3 cups Italian seasoned breadcrumbs
  • fresh mushrooms
  • 2 cans chicken broth 8 ounces each
  • oil for frying
  • 2 cups shredded cheese any kind

Method
 

  1. The night before, cut the chicken into bite-size pieces and place in a bowl with beaten eggs. Ensure chicken is fully submerged, cover, and refrigerate overnight.
  2. The next day, heat oil in a skillet over medium heat. Dip each piece of chicken into Italian seasoned breadcrumbs, coating completely. Fry for about 4-5 minutes until golden brown.
  3. In the crock pot, layer chicken pieces and fresh mushrooms. Repeat layers until all chicken and mushrooms are used. Pour in chicken broth.
  4. Cook on low for 4-5 hours.
  5. After cooking, sprinkle shredded cheese on top. Cover for a few minutes until cheese is melted.

Notes

For the best texture, make sure the chicken is fully coated in breadcrumbs before frying to achieve a crispy exterior.
