Crispy Homemade Shredded Beef Taquitos

  • 1 small chuck roast or similar cut of meat
  • 1/2 onion
  • to taste black peppercorns
  • corn tortillas
  • canola oil for frying
  • shredded lettuce for serving
  • diced tomatoes for serving
  • shredded cheese for serving
  • salsa for serving

Equipment

  • Serving platter

Method
 

  1. Heat canola oil in a frying pan to 350°F.
  2. Using tongs, quickly dip corn tortillas into the hot oil to make them pliable, then drain on paper towels.
  3. Place shredded beef on each tortilla and roll tightly like a cigar.
  4. Carefully lower rolled taquitos into hot oil and fry until golden brown and crispy.
  5. Line a serving platter with shredded lettuce and diced tomatoes, arrange fried taquitos on top, sprinkle with cheese, and serve with salsa.

Notes

Use fresh corn tortillas for better pliability and ensure oil is at 350°F for perfect crispiness without greasiness.
