Ingredients

Main Ingredients
  • 1 lb dried pinto beans
  • 4 slices bacon or salt pork for a different flavor profile
  • 2 quarts water plus extra hot water as needed during cooking
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • to taste salt and pepper

Equipment

  • large pot

Method

  1. Inspect and rinse the dried pinto beans thoroughly. Transfer to a large pot with 2 quarts of water. Bring to a boil and cook for 1 hour, adding hot water as needed to keep beans covered.
  2. Add the bacon pieces to the pot. Cook for another 45 minutes until the bacon is tender and the beans start to break down.
  3. Stir in garlic powder, onion powder, cayenne pepper, salt, and pepper. Reduce heat to low and simmer for 20 to 25 minutes until beans are creamy and broth is thick.

Notes

For enhanced flavor, use thick-cut bacon and simmer the beans gently to achieve the perfect creamy texture.
