Ingredients
  

Salad Base
  • 1/2 head lettuce torn into bite-sized pieces
  • 1 red onion sliced into rings
  • 2 tomatoes cut into wedges
  • 1/2 cup cucumber sliced
  • 1/2 cup black olives
  • 1 green pepper cut into rings
  • 1 cup feta cheese crumbled
  • 1/4 teaspoon salt for salad
  • 1/8 teaspoon pepper
  • 1 dash oregano for topping
Dressing
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced (or 1/2 teaspoon garlic powder)
  • 1/4 teaspoon salt for dressing
  • 1/4 teaspoon parsley
  • 1/4 teaspoon dried chives
  • 1/4 teaspoon tarragon or oregano

Method
 

  1. Prepare the vegetables: tear the lettuce into bite-sized pieces, slice the red onion into rings, cut the tomatoes into wedges, slice the cucumber, and cut the green pepper into rings. Place all vegetables in a large salad bowl with black olives.
  2. Make the dressing: in a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, parsley, dried chives, and tarragon until well combined.
  3. Pour the dressing over the vegetables, add crumbled feta cheese, salt, and pepper, then toss gently to combine.
  4. Sprinkle with oregano and chill in the refrigerator for one hour before serving.

Notes

For optimal flavor, chill the salad for at least one hour before serving to allow the ingredients to marinate.
